What you need:
1/2 cup hazelnuts, walnuts, pecans (or other nut)
15 pitted dates
1 tbl Peanut Butter, Almond Butter, Sun Butter etc
1 tbl cocoa powder
1 tbl maca powder* (optional but so yummy, see notes below)
1 tbl water
pinch of sea salt
pinch of cinnamon
1/4 cup shredded unsweetened coconut for garnish
What you do: In a food processor or blender, pulse to break down the hazelnuts (or nut of choice) into small bits.
Then add everything else in, aside from the shredded coconut. Blend to fully combine - about 1 minute.
Roll into small balls, coat with coconut and plate. Best after about 15 minutes in the refrigerator to hold shape. Can live in the fridge for up to 2 weeks or frozen, 4 months.
*Maca powder comes from the Maca root vegetable of Peru, which gives a nutty-malted flavor. Maca powder is now sold in Trader Joe's, at health food stores & online.
