Best Vegan Cheese Sauce


See how seamlessly a protein, vitamin, veg-packed Vegan Cheese Sauce is born. I've tried many recipes and I tinkered with my own recipe endlessly, until this perfection was achieved.


You only need 12 minutes and a handful of standard ingredients to pull off the healthiest cheese sauce around. Please Enjoy!


What you need:

For the Cheese Sauce:

1 C Chopped Carrot

4-5 Cauliflower Florets

1/4 C Pumpkin Seeds*

1/2 C Non dairy milk

1 Tsp Salt

2 Tbl Tomato Paste or 3 Tbl Marinara Sauce

2 Tbl Nutritional Yeast

Optional for added flavor: 1 Tbl Miso Paste


For the Nachos:

Tortilla Chips

Black Beans

1/2 Onion

1/2 Tsp Cumin

1/2 Tsp Chili powder

3/4 Tsp Salt

Guacamole

Salsa

Optional: Cilantro, Corn, Jalapeno, Ole!


For the Macaroni:

Pasta Shells, or Macaroni

Optional: Garlic Roasted Broccoli



What you do:

Boil the Carrots, Cauliflower & Pumpkin Seeds for 10 minutes. In the meantime, if making nachos, set your onion to saute and Add the remaining Cheese Sauce ingredients to a blender.

Incorporate Boiled Carrots/Cauli/Seeds & Blend to Cheesy Perfection.


For the Nachos, Add black beans to the onion, Season with Salt/Cumin/Chili Powder


Assemble and Devour!


*For the Pumpkin Seeds: I used lightly salted store bought, but extra credit for unearthing them from your household pumpkin! Just make sure to bake them and add an extra 1/2 tsp salt to make up for the difference
