Finger-licking Good BBQ Jackfruit Sandwiches

Here’s the deal, you can make a damn delicious BBQ Brisket or Pulled Pork-like sandwich using the flesh of the Jackfruit. Known as the “Jack of all Fruits” for its assortment of vitamins & nutrients, the jackfruit is a large oblong fruit hailing from Southeast Asia. It’s now made its way into deep into the West of Trader Joe’s, Amazon and more.  I took my time toiling over various jackfruit recipes & cooking techniques, and I can say with confidence this recipe I cooked up is the biggest return on investment... In only 15 minutes of prep, and about $8 of ingredients, you'll get a brilliant BBQ beefy vibe, loved by kids big and small, that works great for parties & can transform leftovers into jackfruit tacos...  Let’s get to it!

What you need:

For the Jackfruit:

2  20oz cans Jackfruit in brine or water

2 Tbl Oil for sautéing

2/3-3/4 C BBQ Sauce (store bought, or homemade)

For the slaw:

1/3 purple cabbage, finely chopped

1-2 Tbl lime juice

2 Tbl Vegan Mayo (store bought, or easily homemade, recipe below)

salt + pepper to taste

Optional slaw additions: green onions, basil, mint, dill, parsley toss some on in there too..

Whole Wheat Burger Buns, Slider Buns, or Buns of Choice

3 Tbl Vegan Mayo + Sriracha to slather on your buns!

Optional Toppings to consider: Avocado, Red Onion, Pickled Red Onion, Pickles, Tomato

What you do: Remove the jackfruit from the cans & drain, rinse well, and start to dig your hands in. Rinse a little more and pat dry. Tear apart the jackfruit, most of it comes apart very easily - the parts that don’t (the bulbs and outer husks) can either be discarded or finely chopped to achieve a similar consistency to the rest. Don’t worry if a couple bulbs sneak in. We’re going for a nice fleshy pulled-beef consistency.

Over Medium heat, oil a pan with 1-2 Tbl of oil for sautéing. Cook the jackfruit for 8-10 minutes, stirring every 1-2 minutes to keep from sticking. After 8 minutes, lower the heat to Low and douse on the BBQ Sauce. (Home made BBQ sauce is naturally vegan so feel free to cut this corner in buying store bought, on the other hand it’s very simple to assemble if you have the gumption.) Cook for 5 minutes more & serve.

Make the Slaw, Sriracha Mayo, & Toast up those buns!

Add any other toppings you like, and get ready for the best sandwich of your week.

Use the leftover jackfruit to make BBQ Tacos two or three days later.. hard corn shells, guac, slaw, salsa, you got this!
