Vegan BLT

Pigs are even more intelligent than dogs! That’s one of so many reasons to leave the piggies alone and get your BLT on with some portobellos.. see how simply bacon strips can be replicated - & improved upon - with this delicious recipe. I make these shrooms in large batches for easy weeknight meals in a flash. They also work great chopped up on salads. Let's get to it..

What you need:

6 portobello mushrooms, thinly sliced

1/2 c soy sauce, tamari, liquid aminos

3 tbl liquid smoke (can be purchased online or found in major grocery stores)

3 tbl maple syrup

1 tbl garlic powder

1 tbl smoked paprika

Sliced bread



Optional: Avocado, red onion

Vegan mayo (just Mayo brand or easy homemade)

What you do:

Preheat your oven to 350 degrees.

Cover the sliced portobellos in almost all of the marinade (reserving about 10% or a few table spoons) on a baking sheet lined with parchment paper or lightly oiled.

*If you have the opportunity to set the marinade in advance, do so.

Bake the mushrooms for 40 minutes -

Removing at the halfway point to shift around the baking sheet. For the final 20 minutes raise the heat to 375 and keep an eye on your shrooms, so they don’t get too black.
